Red Peppers Are the Star of This Healthy and Intesenly Flavorful Spread!

If you’re having a party or just want a dish to work with for multiple kinds of meals, this red pepper spread is perfect for you. Use it on crackers by itself, on a sandwich with mozzarella and salami, or in a wrap with hummus and veggies. Any way you eat it, you will not be disappointed by the extraordinary flavor!

Ingredients

  • 2 medium-sized white onions
  • 1/4 cup of olive oil
  • 1 1/2 pounds of red bell pepper
  • 4 cloves of garlic
  • Salt to taste
  • Any type of vinegar
  • Optional: thyme or tarragon

Recipe

  1. Start by slicing the onions as thinly as possible.
  2. Heat up the olive oil in a large skillet over medium heat.
  3. Cook the onions with a pinch of salt until they’re really soft, stirring every so often.
  4. In the meantime, thinly slice the red peppers and garlic.
  5. Add them to the skillet and add more salt to your taste.
  6. Cook for 10 minutes and stir more frequently until the juices have cooked off.
  7. Once it’s become jam-like, add in a splash of vinegar and some chopped thyme or tarragon and cook for 1 more minute until the acidity of the vinegar has dissipated slightly.
  8. Allow it to cool, and store it in the fridge for up 5-7 days!
