If you’re having a party or just want a dish to work with for multiple kinds of meals, this red pepper spread is perfect for you. Use it on crackers by itself, on a sandwich with mozzarella and salami, or in a wrap with hummus and veggies. Any way you eat it, you will not be disappointed by the extraordinary flavor!
Ingredients
- 2 medium-sized white onions
- 1/4 cup of olive oil
- 1 1/2 pounds of red bell pepper
- 4 cloves of garlic
- Salt to taste
- Any type of vinegar
- Optional: thyme or tarragon
Recipe
- Start by slicing the onions as thinly as possible.
- Heat up the olive oil in a large skillet over medium heat.
- Cook the onions with a pinch of salt until they’re really soft, stirring every so often.
- In the meantime, thinly slice the red peppers and garlic.
- Add them to the skillet and add more salt to your taste.
- Cook for 10 minutes and stir more frequently until the juices have cooked off.
- Once it’s become jam-like, add in a splash of vinegar and some chopped thyme or tarragon and cook for 1 more minute until the acidity of the vinegar has dissipated slightly.
- Allow it to cool, and store it in the fridge for up 5-7 days!
