Refreshing Lemon Cream Dessert for Hot Summer Days

Ingredients

  • 1 cup sugar
  • 6 egg yolks
  • ½ cup orange juice
  • ⅓ cups orange juice
  • ⅓ cups butter
  • 1 teaspoon grated lemon peel
  • Pinch of salt
  • Berries (optional)
  • Crushed Oreos (optional)

Instructions

1. Add sugar, yolks, lemon juice, orange juice, and salt to a pot or a deep pan.

2. Cook on medium heat anywhere from 8 to 10 minutes while constantly stirring. Remove from the stove when you achieve a thick, pudding-like consistency.

3. Add grated lemon peel and butter. Mix until butter, and lemon peel are blended with the rest of the cream.

4. Wait until the cream chills a bit, and then put it in a glass bowl or some other container.

5. Cover with plastic wrap and place in the refrigerator for 30 minutes.

6. You can immediately dig in after 30 minutes, or you can take few extra steps to make the lemon cream even better.

7. If you want to take this dessert over the top, take a glass or a jar, and cover the bottom with some berries (strawberries, blueberries, raspberries). Then add a generous amount of lemon cream. Top everything with crushed Oreo cookies.
