To make the guacamole, start by dicing up red or white onions, tomatoes, and an avocado. Put the cubes of avocado in a bowl and smash them with a fork until they are completely smooth. Add in the tomatoes and onions along with salt, paprika, garlic powder, black pepper, and lemon or lime juice. Mix everything together and taste to see if it’s seasoned properly, and you’re done!
Normally guacamole is served with tortilla chips or on top of tacos, but there is so much more you can do with it. You can serve it with roasted potatoes as a side dish, or on toast in the morning. You can also serve it with fried foods like lentil patties or any fried fish. The freshness of the avocado and the brightness of the other ingredients make any fried dish come to life.
R U S S E T S -&- G U A C 🥔🥑 The perfect match! We had tacos last week so I had everything on hand for fresh guacamole today 🤗 —— Circle-cut potatoes are my favorite for dipping. You just need to spread them out so they roast without touching each other (I use two trays for my family). Also, parchment paper is a must so you can keep them oil free 😊❤️ —— 400 degrees for 25 minutes, switching the trays half way through for even cooking 👌🏻 —— #roastedpotatoes #potatoesandguac #guacamole #potatoes #avocado #lifeisgood #happysaturday #plantbased #plantbasedkids #wfpb #oilfree #vegan #whatveganseat #cleaneating #ecoveggiemama
