Smashed potatoes are a big trend, but smashed sweet potatoes are just as delicious and a whole lot healthier! Try out this recipe for a new take on your favorite tuber.
Ingredients
- 1 pound of sweet potatoes, the smaller the better
- 3 tablespoons of butter
- 1 tablespoon of olive oil
- Salt and pepper to taste
- 1/4 cup of Parmesan cheese
- Parsley to garnish
Recipe
- Start by cutting any larger sweet potatoes in half width-wise, or into thick medallions if you only have large sweet potatoes.
- Bring a large pot of cold water to a boil and salt generously.
- Put the sweet potatoes in and cook until fork-tender, about 15-25 minutes.
- Drain the sweet potatoes and let them cool off for about 5 minutes.
- Put the potatoes onto a baking sheet and use a fork or another baking sheet to lightly smash them down into mostly flattened disks. Leave them on the baking sheet for another 5 minutes.
- Melt the butter and drizzle it over each of the potatoes, followed by the olive oil.
- Bake at 325 F for 25-30 minutes, and then sprinkle over the Parmesan cheese and bake for another 5-10 minutes until they’re crispy but not burnt.
- Sprinkle with parsley and serve with your favorite main course!
