Sweet pickle relish is the ultimate topping for hot dogs at a cookout during the summer, and making it at home is easy and fun!
Ingredients
- 1 1/2 pounds medium pickling cucumbers
- 1 onion
- 1 tablespoon of pickling or kosher salt
- 1 to 2 quarts ice cold water
- 1/2 to 2 cups granulated sugar, however sweet you like your relish
- 1 cups cider vinegar
- 3/4 teaspoons mustard seeds
- 3/4 teaspoons celery seeds
Recipe
- First, chop up the cucumbers and onions and put them into a large bowl with the salt. Add the water on top so everything is submerged.
- Cover the vegetables and leave it out for 2 hours. Then, drain and rinse the vegetables and get out as much liquid from them as possible.
- In a stainless steel pot, pour in the sugar, vinegar, mustard seeds, and celery seeds. Heat it on medium-high heat until the sugar is dissolved and it’s boiling about 5 minutes.
- Add the vegetables to the syrup, bring it up to a boil again, and then reduce it and simmer them for 10 minutes.
- Using a ladle, put the relish into jars that are hot so they don’t break and leave 1/2 inch at the top of the jars, put the lids on, and keep in the fridge for up to 3 weeks!
