These Almond Cookies are Hard to Beat

Ingredients

  • 1 cup of almond flour
  • 1 cup of all-purpose flour
  • 1 cup of unsalted butter
  • 1 cup of granulated sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Sliced almonds for topping (optional)
  • 2 tablespoons cocoa powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together almond flour, all-purpose flour, baking powder, and salt.
  3. In another bowl, using an electric mixer, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, almond extract, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft cookie dough forms.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, leaving some space between each cookie. If you fancy it, gently press a few sliced almonds onto the top of each cookie.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  8. Once cooled, store the cookies in an airtight container to maintain their freshness.
