Try Making Your Own Kale Butter

Adding kale to your butter transforms an ordinary spread into a nutrient-packed and delicious treat. The vibrant color of the kale butter adds an aesthetic quality as well as a healthy twist to your meals and snacks. Here’s how to make it.

Ingredients

  • 2 cups of fresh kale
  • 1 cup of soft unsalted butter
  • 2 cloves of garlic
  • 1 tablespoon lemon juice
  • Salt
  • Black pepper
  • Optional- red pepper flakes for a hint of heat

Instructions

  1. To blanch the kale, bring a pot of water to a boil and prepare a bowl of ice water. Drop the kale leaves into the boiling water for about 1-2 minutes, then quickly transfer them to the ice water to cool. Drain and squeeze out excess water. In a food processor, combine blanched kale, softened butter, minced garlic, lemon juice, salt, and pepper.
  2. Blend the ingredients until the kale is finely chopped and incorporated into the butter. Scrape down the sides of the processor as needed. Taste and adjust the seasoning according to your preferences. If you like a bit of heat, add red pepper flakes. Transfer the kale butter to a bowl or mold it into a log using parchment paper.
  3. Chill the butter in the refrigerator for at least 1-2 hours to allow the flavors to meld.
  4. Serve your kale butter on toast, crackers, or as a flavorful addition to your favorite dishes. Enjoy!
