Try These Tasty, Healthy Lemon Bars

This dessert is an instant favorite filled with so much goodness. It is sunny, light and sweet. Classic lemon bars are suitable for all season and look like tiny squares of sunshine. It is also quite easy to prepare; this article will show you how.

Ingredients

Crust:
1/4 cup coconut flour
1 1/2 cups almond flour
3 tablespoons coconut butter
2 tablespoons coconut sugar

Lemon Filling:
1/2 cup coconut sugar
2 eggs
1-tablespoon coconut flour
1-teaspoon lemon zest
2/3 cups lemon juice

Method

Crust:

Preheat your oven to about 350 degrees and spray your pan with a non-stick spray. Mix the ingredients with your hands until it becomes fine crumbs. Place in the baking pan and bake for up to ten minutes. Remove the pan from the oven and let it cool.

Filling:

Use a large mixing bowl to whisk all the ingredients until it becomes smooth. Pour this mixture on the cooled crust. Tap the pan gently to remove any bubbles that may rise to the surface. You can pop the bubbles on the top with a toothpick. This will make the lemon bars creamy and smooth.

Bake it for about ten to twenty minutes, or you can wait until the filling sets and becomes firm. Remove it from the oven and let cool before serving.
