This Baileys cake recipe will become your go-to for every special celebration!
For the cake you need to get:
1 cup buttermilk
2 cups sugar
1 large egg
2 cups all-purpose flour
1/4 cup Baileys Irish Cream
1/2 teaspoon salt
2/3 cup olive oil
1 cup strong black coffee
1 tablespoon baking soda
1 cup 100% unsweetened cocoa powder
To make the frosting you should get:
1/3 cup powdered sugar
1/4 cup very cold Baileys Irish Cream
2 cups very cold heavy whipping cream
2 teaspoons unflavored gelatin in 2 tablespoons water
Set the oven to 350 F degrees and prepare two 9” cake pans with cooking spray.
Combine the egg, buttermilk, coffee, oil, and Baileys. Mix them well together.
Grab another bowl and fill it with the cocoa, sugar, baking soda, flour, sugar, and salt. Mix all together.
You can now combine the ingredients from the two bowls together. Start mixing with your hands. This is the batter for the Baileys can and you should add it to the two pans.
Leave them in the oven for 20 to 25 minutes.
In the meantime, you can get a chilled metal bowl and fill it with the powdered sugar, heavy cream, and Baileys. Beat them together to get stiff peaks.
Add the liquid gelatin to the mix, but make sure it’s very slowly. Beat while you’re adding it.
The cakes should be cold so that you can layer the frosting.
