Beets are a powerhouse vegetable. They have tons of fiber, folate, vitamin C, and even some protein! Beets are a highly underrated vegetable, and can really bring a lot of yummy flavor and beautiful color to a dish, especially a salad.
This simple beet salad only has few ingredients, but that’s the beauty of it; there’s nothing special to it, but the flavors just come together so well that it’ll instantly become one of your favorites.
Ingredients
- 3 beets of any color
- 1 package of arugula
- 3 tablespoons of balsamic vinegar
- 1/2 cup of olive oil plus 2 tablespoons
- 1 teaspoon of Dijon mustard
- Goat cheese or feta cheese
- Walnuts or any other type of nut
Instructions
- Start by rinsing and peeling the beets. You want to use gloves while handling the beets, since they can definitely stain your hands.
- Cut the beets up into quarters, and then, depending on how big they are, into quarters again or at least halves.
- Spread them on a baking sheet and drizzle over about 2 tablespoons
olive oil, along with a sprinkle of salt and black pepper. - Roast at 425 F for about 20 minutes or until they’re fork tender.
- In a bowl, put in the arugula, cheese, nuts, and beets.
- Mix up the vinaigrette by adding the balsamic, olive oil, dijon, and a pinch of salt and pepper.
- Pour over the salad, toss, and enjoy!
