  • 3 beets of any color
  • 1 package of arugula
  • 3 tablespoons of balsamic vinegar
  • 1/2 cup of olive oil plus 2 tablespoons
  • 1 teaspoon of Dijon mustard
  • Goat cheese or feta cheese
  • Walnuts or any other type of nut

Instructions

  1. Start by rinsing and peeling the beets. You want to use gloves while handling the beets, since they can definitely stain your hands.
  2. Cut the beets up into quarters, and then, depending on how big they are, into quarters again or at least halves.
  3. Spread them on a baking sheet and drizzle over about 2 tablespoons
olive oil, along with a sprinkle of salt and black pepper.
  4. Roast at 425 F for about 20 minutes or until they’re fork tender.
  5. In a bowl, put in the arugula, cheese, nuts, and beets.
  6. Mix up the vinaigrette by adding the balsamic, olive oil, dijon, and a pinch of salt and pepper.
  7. Pour over the salad, toss, and enjoy!
