Chill All Summer Long With Iced Matcha Horchata

Ingredients

  • 3 cinnamon sticks
  • 1/3 cup uncooked white rice
  • 5 cups hot water (it shouldn’t be boiling)
  • 1/3 c coconut flakes
  • 1/3 c cashews
  • 1 teaspoon vanilla
  • 1/4 cup maple syrup
  • 1/2 cup canned coconut milk
  • 1 teaspoon matcha powder for 8 oz horchata.

Instructions

Start by adding the cinnamon and rice into the hot water for 8 to 10 hours. Leave the bowl in the fridge.

When the time is up, add this mixture to a blender and include the coconut flakes and cashews as well. Pulse for a few minutes until the drink gets a creamy texture.

Get a strainer and pour the liquid over it. Discard whatever’s left on the strainer.

Add the 1 teaspoon vanilla, 1/4 cup maple syrup, and 1/2 cup canned coconut milk to the liquid.

Fill a tall glass with ice. Pour the drink over it. The last step is to add 1 teaspoon matcha powder.

Mix it well, and your matcha horchata is ready!
