Ingredients
4 leeks
1 large carrot
3 new potatoes
200 g fresh spinach leaves
4 fresh string beans
2 tablespoons olive oil
1 zucchini
3 quarts water
Salt, to taste
Instructions
Start off by placing the three quarts of water in a large saucepan with a touch of salt. Mix, and then put on the stovetop and heat to a boil.
While the water heats up, go ahead and remove the skin from your carrot, the zucchini, and the potatoes. After you’ve done this, chop them into large chunks and set aside.
Next, you’ll also want to chop the string beans and the leeks into large chunks. Be sure to wash them before doing so. Set them aside too.
Once the water is boiling, add the vegetable chunks and the whole spinach leaves into the boiling water. Reduce heat to medium and leave to boil for 10-15 minutes.
When the vegetables have softened, go ahead and remove them from the water and place them into a large bowl. Add about a quart of water and two tablespoons of olive oil.
Blend with an electric mixer until the soup is creamy and just slightly watery.
