This Pasta Dish is the Ultimate Mid-Week Meal

Once we get to the middle of the working week, whipping up an amazing meal for dinner can feel like more effort than it’s worth. However, you don’t have to work for hours in the kitchen to create something exciting, tasty, and healthy. Just check out this nutritious pasta dish, which is crammed full of flavor and color.

Ingredients (to serve 2):

  • 2 zucchini
  • 2 tablespoons of olive oil
  • 4 garlic cloves
  • 1 teaspoon of chilli flakes
  • 1 lemon, zested and juiced
  • 1/2 teaspoon of salt
  • 2 cups of dried spaghetti
  • 1 tablespoon of tomato puree

Instructions:

  1. 1. Heat the olive oil in a wide-based pan.
  2. 2. Grate the zucchini and add this to the pan.
  3. 3. After 5 minutes, add the diced garlic, lemon zest, chilli flakes, tomato puree and salt. Stir through well, and cook for 10 – 15 minutes.
  4. 4. Cook the pasta according to packet instructions, once it’s done retain 1/4 cup of the cooking water.
  5. 5. Stir the cooking water through the sauce and then serve.

So tasty yet simple, this pasta dish is a great choice to have when the midweek lull hits.
