This Tagine Recipe Will Impress Your Guests

A tagine is a fantastic Moroccan dish that makes for a great dinner party as you can slowly cook it in a big batch and people can serve themselves. It’s also quite an exotic dish that combines aromatic spices, tender meats, and a certain sweetness. Here’s a recipe for a chicken tagine dish.

Ingredients

  • 2 pounds of chicken thighs
  • 2 tablespoons of olive oil
  • 1 large onion
  • 6 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 tin of chopped tomatoes
  • 1 cup of chicken broth
  • 1 cup of dried apricots
  • 1/2 cup of pitted green olives
  • Fresh cilantro or parsley
  • Salt
  • Black Pepper

Instructions

  1. Heat olive oil in a large pan with a lid over medium heat. Add finely chopped onions and minced garlic, sautéing until softened and aromatic. Brown the chicken thighs in the fragrant onion and garlic mixture until golden on all sides.
  2. Add your ground cumin, coriander, cinnamon, ginger, paprika, and cayenne pepper over the chicken and onions.
  3. Pour in your tin of tomatoes and chicken broth. Add dried apricots and green olives to the mix, infusing the dish with a sweet and savory balance. Season with salt and pepper to taste, adjusting the spices if needed.
  4. Cover the pan, and simmer on low heat for 45-60 minutes, allowing the flavors to meld and the chicken to become tender.
  5. Garnish with fresh cilantro or parsley just before serving to add a burst of freshness. Serve the tagine over couscous or rice, and enjoy!
