This Tomato and Tuna Pasta Dish is Surprisingly Tasty

Ingredients:

  • 8 ounces of pasta (such as spaghetti or penne)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tin of diced tomatoes
  • 1 tin of tuna in olive oil, drained
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until soft and fragrant, about 2-3 minutes.
  2. Add the diced tomatoes (with their juices) to the skillet, stirring to combine with the garlic and onion. Cook for another 5 minutes, allowing the flavors to meld together.
  3. Add the drained tuna to the skillet, breaking it up with a fork into smaller pieces. Stir well to incorporate the tuna into the tomato mixture. Season the sauce with dried oregano, salt, and pepper to taste. Allow it to simmer for an additional 5-7 minutes, stirring occasionally, until the sauce has thickened slightly.
  4. Add the cooked pasta to the skillet, tossing gently to coat it evenly with the tomato and tuna sauce. Serve it hot, garnished with fresh chopped parsley and grated Parmesan cheese, if desired.
