Vegan Eggplant Bacon is Just as Good as the Real Thing!

There are many fake meat products on the market that are readily available for vegans and vegetarians. But, if you live in a place where you can’t find good quality products or if you would prefer to have everything truly plant-based, you can still enjoy this vegan bacon recipe! Turn a regular eggplant into something phenomenal with almost no effort at all!

Ingredients

The secret ingredient that makes this bacon so delicious and smokey is the addition of liquid smoke. This product is just as it sounds; the taste of smoke in a liquid form. Adding just a couple of teaspoons to your sauce will make your eggplant taste completely like bacon.

Method

  1.  Cut an eggplant into quarters so you get the width of a normal piece of bacon.
  2. Use a very sharp knife or mandoline to cut the pieces into thin strips.
  3. Lay the strips on a parchment lined baked sheet.
  4. Then, make the sauce that will cover the eggplant. In a bowl, combine olive oil, soy sauce, vegan Worcestershire sauce, liquid smoke, paprika, garlic powder, and a pinch of sat.
  5. Mix together the sauce and use a pastry brush to cover each slice.
  6. Bake for about 20 minutes at a low temperature, and then put the eggplant under the broiler for just a minute to make them really crispy.
  7. Enjoy!
