Vegan Kofta Kebabs on a Cinnamon Stick

Kebabs are a food staple amongst Middle Eastern countries such as Turkey, Israel, and Iran. Each cultures have their unique blends, recipes, and spices that will transform your tastebuds and take you on a culinary journey across time. This recipe is Middle Eastern fusion, plant-based, and will make your taste buds dance! Keep reading for a unique twist on Middle Eastern kebabs.

Ingredients

  • 1 pound of ground plant-based meat of choice
  • 1 diced onion
  • 1 handful of finely diced mint and parsley
  • 1 Tsp of sumac
  • 1 tsp of cinnamon
  • 1 tsp of cumin
  • juice of one lemon
  • Salt and pepper to taste
  • Large package of cinnamon sticks
  • 3 garlic cloves – minced
  • vegan plain yogurt for dipping sauce, sliced cucumber, and fresh mint

Instructions

  1. Mix your ground beef with onions, herbs, spices, and lemon juice- set aside in the fridge to marinate for an hour
  2. While your meat is marinating in the fridge, prepare your dipping sauce by combining fresh mint with plain yogurt (vegan if you want to keep the recipe plant-based) fresh mint, cucumbers, and lemon zest, 1 tsp of lemon juice, and Salt and pepper to taste.
  3. Once the meat finishes marinating, assemble the meat on the cinnamon sticks until they are fully wrapped around the sticks
  4. Grill the kebabs until they are fully cooked or bake them in the oven at 350 degrees
  5. Serve with a side of rice, grilled veggies, and your dipping sauce, garnish with more fresh herbs, and enjoy!
