Boil up some pasta the night before (penne or elbow macaroni work great with this) and add chopped veggies like baby tomatoes, cucumber, olives, and peppers.
Crumble in some feta and you’re good to go. You can also make a quick vinaigrette using olive oil vinegar, sugar, salt, and pepper, or feel free to add your favorite dressing.
Hummus Veggie Wraps
Wraps are sandwiches’ cooler older brother. Spread your favorite store-bought wrap with a good helping of hummus and layer with whatever vegetables you have in the fridge. We particularly like putting in raw julienne carrots and slightly boiled broccoli to add some crunch!
