You Need to Try This Spicy Chicken and Avocado Salad Right Away

Avocado and chicken are a surprisingly great pairing, especially when they meet in a salad. Add a bit of spice to the equation, and you have yourself an amazing dish. This is exactly what our spicy chicken and avocado salad is all about. If you want to try something new yet delicious, here is how to make it.

Ingredients:

  • 2 boneless chicken breasts
  • 1 ripe avocado
  • 1 shallot
  • 2 chili peppers
  • ¼ cup roasted and salted peanuts
  • 2 cups arugula
  • 4 chicory leaves
  • 4 teaspoons honey
  • 3 teaspoons lime juice
  • olive oil

Instructions:

  1. First, you need to cook the chicken. The best way is to line them on a baking sheet brushed with olive oil, sprinkle them with salt and bake for 25 minutes in a preheated oven at 400F.
  2. While the chicken bakes, remove the seeds from chili peppers and cut them into small bits. Mix with honey in a separate cup.
  3. Once the chicken is baked, brush it with half of the honey and chili mix and let it sit.
  4. Brush a pan with olive oil and sauté diced shallot until it browns. Remove from the heat and add the other half of the honey and chili mix, lime juice, two teaspoons of olive oil, and a pinch of salt. Stir until all the ingredients are combined. This will be your salad dressing.
  5. Peel the avocado and slice it before adding it to your salad bowl. Chop the arugula and chicory into bite-size bits and add them to the bowl.
  6. Slice the chicken into bite-size bits as well, and introduce it to the mix.
  7. Finally, drizzle the salad with your salad dressing, garnish with peanuts, and dig in.
