Zucchini Feta Fritters Are the Most Delicious Appetizer

Ingredients:

The ingredients list includes 2 large eggs, 3 medium zucchini, 1/2 teaspoon salt, 1/2 cup crumbled feta cheese, 1/3 cup fresh mint leaves, ground black pepper, 1/4 cup diced yellow onion, 1/2 teaspoon ground cumin, 1 cup whole wheat flour, 4 cups extra virgin olive oil.

Instructions:

The first step of making the zucchini feta fritters is to grate the zucchini with a grater on the largest side. Remove all the liquid from the zucchini and squeeze very well to make sure that you got it all out. In a bowl mix them with the onion, eggs, feta, salt, pepper, mint, and cumin. Add the flour. Mix everything well.

Use a skillet to heat 1 teaspoon olive oil. Start making small fritters from the mixture and you can now put them in the oil. If it’s a larger skillet you can make more at the same time. Cook each side for around 3 to 5 minutes. Serve them with your favorite side. Some of the best options are sour cream, mayonnaise, and more.

Fry on one side for 2 minutes before flipping to fry on the other side for a further 2 minutes. 6.
