The James Beard Foundation is one of the most important and influential food organizations in the United States and the world at large. Each year, JBF hosts an awards ceremony in May to honor the best annual culinary talent around the country, paying homage to new and experienced chefs and restaurants alike.

Prior to the ceremony each year, the James Beard Foundation designates five restaurants as “America’s Classics,” which means that they’ve stood the test of time and have become renowned culinary institutions of great merit in their respective locales. While restaurants and food trends come and go like the wind, these special restaurants added to the list have earned their stripes to be lauded and become national foodie treasures.

Here’s a look at the five prized eateries chosen to the “America’s Classics” list in 2018:

Sun Wah Barbecue (Chicago, Illinois)

Los Hernandez Tamales (Union Gap, Washington)

restaurants (Tucson, Arizona)
