Banana Peels are the Star of This Vegan Pulled Pork!

Banana peels might not seem like a normal ingredient to use, but they’re actually really delicious and work perfectly in this vegan pulled pork recipe!

Ingredients

  • 2-3 organic banana peels
  • 1 1/2 tablespoons of olive oil
  • 1 tablespoon of hot paprika
  • 3/4 teaspoon of chili powder
  • 3/4 teaspoon of mustard powder
  • 3/4 teaspoon of garlic powder
  • 3/4 teaspoon of onion powder
  • 1/4 teaspoon of cumin
  • 2 tablespoons of bbq sauce
  • Pinch of salt

🍌 (scroll down to skip to the recipe) I saw a recipe recently that used banana peels to make a pulled meat substitute and was very skeptical. I thought of banana peels as something to throw away, not something to eat, but I was definitely curious because it kept popping in my head when I was grocery shopping. 🍌 Yesterday I saw two different posts in the same day using banana peels and I took it as my sign to try it for myself. 🤓 Turns out, it actually is really good! The texture was very similar to pulled pork or chicken, it tasted nothing like banana, and the sauce I made for it was so so good. I just used the peel from one banana for this recipe, and it was the perfect size for a single serving, so this recipe is for 1 serving, adjust it accordingly 🙂 🍌 So here’s what you gotta do: Buy organic bananas (you’re eating the peel, after all). Wash one thoroughly (remove the sticker). Peel it. Use the side of a fork to scrape out the stringy bits on the banana side of the peel. Use the fork to shred the peel by dragging it down the length of it. Use a knife to cut off the ends and cut the pieces into the size you want. Mix up the marinade: 2 Tbsp of your fave bbq sauce, 1 Tbsp orange juice, 1 tsp sriracha, 1/2 tsp garlic powder, dash of white pepper. Toss them in the marinade so they’re all coated and let it sit in the fridge for a few hours or overnight (I let them marinade for about 6 hours). Eat the banana for a snack as you wait. Dump it all into a nonstick pan, add 2 Tbsp water, and simmer on low heat, covered, for 15 min or so. Stir and then turn up the heat for a couple minutes so the sauce gets kind of crispy/sticky. Boom. Done. Put it on a sandwich with avocado and onion and you’re golden. 🍌 What do you think about banana peel meat? Let me know in the comments and give it a try!

Recipe

  1. Take the banana peels and cut off the top and bottom of them.
  2. Using a spoon scoop the white part out of the peels and then take a fork and shred the peels so they become long strands.
  3. Cut the strands half and then put them into a bowl. Add in the oil, all the seasonings, and salt, and mix it well.
  4. Put a pan on the stove and heat it over medium heat, and then pour in the banana peel mixture.
  5. Cook everything for 5-10 minutes so the peels aren’t mushy but soft enough to eat.
  6. Then, pour in the bbq sauce and cook for another minute or two just so the sauce can adhere to the peels.
  7. Toast a bun and put the peels down with some coleslaw or your favorite fixings and enjoy!
