Pickled Watermelon Rind

When you imagine a watermelon, it’s not assumed you’ll be eating the rind. But, by pickling it, you can! This classic southern dish can be used like any other pickled condiment, even put into chicken or tuna salad. The process is similar to pickling other vegetables, including water, sugar, salt, and various pickling spices, but the boiling times and steps can vary from recipe to recipe.
