  • 2 cups of plain flour
  • 1 1/2 teaspoons of baking powder
  • 1/2 cup of dessicated coconut
  • 1/2 cup of coconut milk
  • 3/4 cup of unsalted butter
  • 3/4 cup of caster sugar
  • 3 eggs

For the frosting:

  • 1/2 cup of unsalted butter
  • 1/4 cup of coconut flakes
  • 1/2 cup of icing sugar


  1. Cream the butter and sugar together in a large mixing bowl.
  2. Sift in the flour and baking powder, mix well to combine.
  3. Whisk in the eggs and then add the coconut milk and dessicated coconut.
  4. Pour the batter into a lined and greased cake tin, bake in an oven heated to 350 degrees F for 45 minutes.
  5. Once the cake has cooled, make the frosting. Beat the butter and icing sugar together, stir in the coconut flakes, and then frost the cake.
