Ingredients:

  • 4 slices of ham
  • 4 eggs
  • 4 large potatoes, peeled and cut into chips
  • 2 tablespoons olive oil
  • Salt
  • Black pepper
  • Optional garnishes: chopped fresh parsley, ketchup, hot sauce

Instructions:

  1. Preheat your oven to 425°F (220°C). Place the peeled and cut potatoes in a large bowl of cold water for about 30 minutes. This helps remove excess starch and ensures crispy chips.
  2. Drain the potatoes and pat them dry with paper towels. Spread the potato chips in a single layer on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper, tossing to coat evenly.
  3. Bake the chips in the preheated oven for about 30-35 minutes, flipping halfway through, until they are golden brown and crispy. While the chips are baking, heat a non-stick skillet over medium heat. Add the slices of ham and cook for about 2-3 minutes on each side, until lightly browned and heated through. Remove from the skillet and set aside.
  4. In the same skillet, crack the eggs and cook to your desired doneness, whether fried, scrambled, or poached. Once the chips are crispy and golden brown, remove them from the oven and transfer them to a serving plate.
  5. Top the chips with the cooked ham slices and the eggs. Garnish with chopped fresh parsley, if desired, and serve immediately with ketchup, hot sauce, or your favorite condiments on the side.
