Especially when you are dealing with the white meat of chicken, it sometimes feels inescapable. Luckily, there are some easy ways to make sure your chicken breasts and wings always come out nice and juicy with these easy steps.

Dry Poaching

This method of cooking really has nothing to do with poaching at all but ends up with that same type of results. If you want to roast your chicken breast, this method requires you to place a piece of parchment paper on top of the breasts while you’re cooking- it’s that simple! This will ensure that the juices that come out of the chicken will be close by and not evaporate.

If you want to saute your chicken, cover it for 10 minutes and you will get perfectly cooked chicken. The only thing you can’t do is peak, or the steam will escape and disrupt the process.

If you invest in a meat thermometer, you will never have dried out chicken. Just stick it into the thickest part of the meat, and when it registers at 165F you are done!
