How to Cook a Scrumptious Peruvian Chicken

From roasting to grilling and even deep frying, what’s great about chicken is how diverse it is. Another scrumptious way to cook chicken is by cooking it in Peruvian style. Sprinkled in some spicy seasoning and doused in a saucy marinade, here is how you can cook up a succulent Peruvian chicken in your home kitchen.

Ingredients:

  • 2 1/2 pounds chicken thighs
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 tablespoon vinegar
  • 1 teaspoon ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon aji amarillo paste

Instructions:

  1. Preheat oven to 450°F.
  2. In a large bowl, whisk together the aji amarillo, cumin, garlic, paprika, vinegar, salt, and pepper. Once the marinade is blended, submerge the chicken and ensure it is generously coated all over.
  3. Cover the chicken in the bowl and refrigerate for at least 30 minutes at room temperature.
  4. Place the chicken skin side up on a baking tray and put it into the oven.
  5. Bake the chicken for about 25 to 35 minutes, until the skin appears a deep golden brown.
