Thought only veggies could be pickled? Well, we have news. It’s well known that strawberries and balsamic vinegar work wonderfully together, which is why pickling the fruit makes them all the better! Use them over vanilla ice cream or on top of toasted sourdough with some goats cheese and honey.

Ingredients:

  • 1 ½ x cups strawberries, halved
  • 1/3 x cup white balsamic vinegar
  • 1 X tablespoon sugar
  • 1 x tablespoon peppercorns
  • 1 x pinch salt
  • Water

Instructions:

  1. Fill a jar with the cut strawberries. Add in the vinegar, sugar, peppercorns, and salt.
  2. Pour enough water to fill the remainder of the jar. Secure the lid and shake gently to combine.
  3. Place the jar in the refrigerator for 2 hours, or up to 2 days.
