For this prawn pappardelle you should get:
300 g pappardelle pasta
20 peeled and deveined green prawns
1 finely chopped red onion
360 g frozen peas
40 g unsalted butter
80 ml extra virgin olive oil
80 g finely grated Parmesan
Cook the onions with 2 tablespoons olive oil for 4 minutes. When they become soft you should add 2 cups of the peas. Continue cooking for 2 more minutes.
Pour them in a blender and pulse until you get a puree. Add salt and pepper to your taste.
Cook the pappardelle pasta according to the instructions on the box.
Save 1/3 cup of the water that you cooked it in and mix it with the puree of peas.
Mix the Parmesan, pasta and 2 tablespoons of olive oil.
In a pan cook the prawns with butter for 2 to 3 minutes per side. Add 1 cup of the peas and mix them well together. Leave the mixture on the stove for 2 to 3 minutes.
Combine all of the ingredients together and your pasta is ready to be served.
