Ingredients

  • 1 cup of sun-dried tomatoes (packed in oil), drained
  • 2 cloves of garlic
  • 1/4 cup of pine nuts or walnuts
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of fresh basil leaves
  • 2 tablespoons fresh parsley leaves
  • 1/3 cup of extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. In a food processor or blender, combine the sun-dried tomatoes, garlic, pine nuts or walnuts, grated Parmesan cheese, basil leaves, and parsley leaves.
  2. Pulse the ingredients until they are finely chopped and well combined.

  4. Taste the pesto and season with salt and pepper as desired. Adjust the consistency by adding more olive oil if needed.
