Coconut is a great base for biscuits and cakes, due to its natural creamy, sweet taste. This simple gluten-free recipe results in tasty, moist, rich biscuits that will please guests or anyone they’re gifted to.
Ingredients (to make 16):
- 1 1/2 cups of desiccated coconut
- 1 cup of caster sugar
- 4 eggs whites
- 2 tablespoons of oil
- 1/2 cup of dark chocolate
Instructions:
- 1. Whisk the egg whites in a bowl.
- 2. Heat the sugar and oil in a pan, once the sugar has dissolved whisk in the egg whites and coconut.
- 3. Keep stirring the mix until it resembles a batter. Leave covered for 1 – 2 hours, and then shape the mix into small biscuits or balls. Place on greaseproof paper on a tray and set in the fridge.
- 4. Melt the dark chocolate and drizzle over the biscuits once they’ve set in the fridge for 2 hours.
