These Coconut Biscuits are a Great Gluten Free Treat

Coconut is a great base for biscuits and cakes, due to its natural creamy, sweet taste. This simple gluten-free recipe results in tasty, moist, rich biscuits that will please guests or anyone they’re gifted to.

Ingredients (to make 16):

  • 1 1/2 cups of desiccated coconut
  • 1 cup of caster sugar
  • 4 eggs whites
  • 2 tablespoons of oil
  • 1/2 cup of dark chocolate

Instructions:

  1. 1. Whisk the egg whites in a bowl.
  2. 2. Heat the sugar and oil in a pan, once the sugar has dissolved whisk in the egg whites and coconut.
  3. 3. Keep stirring the mix until it resembles a batter. Leave covered for 1 – 2 hours, and then shape the mix into small biscuits or balls. Place on greaseproof paper on a tray and set in the fridge.
  4. 4. Melt the dark chocolate and drizzle over the biscuits once they’ve set in the fridge for 2 hours.
