This Butternut Squash Soup is Wholesome and Healthy

Soup is a great option at any time of year, but especially during the winter. A warm bowl of nutritious soup is an ideal way to get through the grey, cold days, so check out this bright and healthy butternut squash soup recipe.

Ingredients (to serve 4)

  • 1 butternut squash, peeled and deseeded
  • 1 onion
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of tomato puree
  • 1/4 cup of coconut milk
  • 1 cup of water
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of salt
  • 3 cups of spinach

Instructions

  1. Cube the squash and coat with 1 tablespoon of oil.
  2. Place on a baking tray and then roast in the oven at 350 degrees for 30 – 40 minutes.
  3. Meanwhile, dice the onion and then fry it with the remaining oil, smoked paprika and salt.
  4. Once the onion has softened, add the tomato puree, coconut milk and water. Simmer for 5 minutes.
  5. Add the roasted squash to the pan, then blitz the soup smooth. Return to the pan and heat over a medium heat.
  6. Add the spinach to the pan. As soon as it wilts, remove the pan from the heat and serve.
