Easy Mushroom and Cheese Muffins Recipe

If you’re feeling extra lazy today and still want a yummy savory snack to add to your meal or nibble on between meals, few things beat this easy mushroom and cheese muffin recipe. You don’t even need a full-on oven to make them – even a small toaster oven will do the trick. Ready? Let’s get bakin’.

Ingredients

  • 7 oz sour cream
  • 3 eggs
  • 3/4 cup self-rising flour
  • 1/2 cup grated yellow cheese (mozzarella, parmesan, cheddar – your choice)
  • 2 cups canned mushrooms
  • 1 teaspoon salt
  • A tiny bit of black pepper

Instructions

  1. Put all the ingredients together in a large bowl and stir them well until you get an even texture.
  2. While you mix, heat your oven to 356°F.
  3. When you’re done stirring, carefully pour the mixture into a 12-cup silicon muffin mold and slide it into the heated oven.
  4. Check in on your cheesy muffins every now and then.
  5. Once they’re golden brown and crispy on the outside, it means they’re good to eat.
  6. It should take them roughly 30 minutes to reach that state, but if they need a little less or more than that, adjust as required.
