If you’re feeling extra lazy today and still want a yummy savory snack to add to your meal or nibble on between meals, few things beat this easy mushroom and cheese muffin recipe. You don’t even need a full-on oven to make them – even a small toaster oven will do the trick. Ready? Let’s get bakin’.
Ingredients
- 7 oz sour cream
- 3 eggs
- 3/4 cup self-rising flour
- 1/2 cup grated yellow cheese (mozzarella, parmesan, cheddar – your choice)
- 2 cups canned mushrooms
- 1 teaspoon salt
- A tiny bit of black pepper
Instructions
- Put all the ingredients together in a large bowl and stir them well until you get an even texture.
- While you mix, heat your oven to 356°F.
- When you’re done stirring, carefully pour the mixture into a 12-cup silicon muffin mold and slide it into the heated oven.
- Check in on your cheesy muffins every now and then.
- Once they’re golden brown and crispy on the outside, it means they’re good to eat.
- It should take them roughly 30 minutes to reach that state, but if they need a little less or more than that, adjust as required.
- Enjoy!
