This Chilaquiles Verdes is Perfect for Breakfast or Dinner

If you love eating breakfast for dinner, then here is a delicious recipe for you. While traditionally served as a breakfast, this scrumptious Chilaquiles Verdes is filling enough to satisfy your hunger after a long day at work, helping you to finish your day on top.

Ingredients

  • 10 ounces tomatoes, cut and halved
  • 4 eggs
  • 1/2 large onion
  • 2 garlic cloves
  • 2 jalapenos
  • salt and pepper
  • 2 tablespoons lime juice
  • 2 cups cilantro
  • Cottage cheese
  • Hot sauce
  • Olive oil
  • Pack of yellow corn tortilla chips

Instructions

  1. Toss tomatoes, onion wedges, garlic, and jalapenos on a large baking sheet, seasoning with a half teaspoon of salt and pepper. Place on a broiler and cook for eight to 12 minutes, until vegetables are tender.
  2. Once broiled to satisfaction, toss the vegetables into a blender, adding cilantro, two tablespoons of lime juice, half a cup of water, and half a teaspoon of salt and pepper. Once blended, taste the mixture and add more lime juice or salt and pepper if desired.
  3. Place the salsa mix in a large bowl and add the tortilla chips before mixing. Sprinkle chopped onion onto the mixture and top it all off with fried eggs, onion, cilantro, and cream cheese.
