This Garlic Soup Recipe is Soup-Er Comforting

It’s the perfect time of year to try new soups and you’ll be glad you gave this garlic soup a try! In addition to being very healthy, it is also absolutely delicious and very comforting on a cold evening. Here’s a recipe that shows you how to make it.

Ingredients

  • 1 bulb of garlic
  • 1 onion
  • 3 medium potatoes
  • 1 vegetable or chicken stock cube
  • 1 teaspoon of dried thyme
  • 2 tablespoons of olive oil
  • 1/2 cup of single cream (optional)
  • Salt
  • Black pepper
  • Fresh parsley

Instructions

  1. In a large saucepan, heat your whole peeled garlic cloves in your olive oil on a medium heat until they become golden brown. Make sure not to burn them. Add a finely chopped onion to your pan and cook until transluscent, which should be 5-10 minutes. Stir in your potato cubes and cook for 5 minutes.
  2. Add your vegetable or chicken broth until it covers your vegetables. Add your dried thyme, salt, and black pepper. Stir well.
  3. Bring the soup to a gentle boil and leave to simmer. Cover and leave on a low heat to cook your potatoes, around 15-20 minutes.
  4. Use a hand blender to blend your soup once it is all cooked. If you want it to be extra creamy, stir in your single cream. Taste for salt and pepper and add more if needed. Serve with crusty bread and garnish with fresh parsley if you like. Enjoy!
