This White Chicken Chili Recipe Makes a Perfect Dinner

White bean chicken chili is one of my favorite hearty meals. It’s filling and delicious, and the recipe is super easy to make, and it also isn’t as heavy and high-fat as other chili recipes.

Let’s take a look at how to prepare this delicious recipe, which is definitely going to become one of your dinner favorites.

Ingredients

  • 2 cups chicken broth
  • 1 can white beans
  • 1 large chicken breast
  • 1 large onion
  • 1 clove of garlic
  • 1 can green chiles
  • ½ cup water
  • Sour cream
  • 1 avocado
  • Salt
  • Black Pepper

Instructions

Start off by turning your slow cooker or Crock Pot on low heat. Once you’ve done this, place the white beans and the chicken broth into the cooker and close. You’ll want to cook this for about an hour and a half to two hours, or until the beans are soft.

Right after the two hours pass, place the chicken breast in a pan on your stove. You’ll want to cook it on medium heat in olive oil for about 5 minutes on each side. Don’t worry if it isn’t all done–the cooking will finish in the slow cooker. Dice and place into the broth and beans mixture.

After this, place the chopped garlic clove and onion and the green chiles into the slow cooker along with the chicken breast. At this time, also add a half cup of water to the slow cooker.

Wait for four to six hours, and the chili will be finished cooking. Garnish with salt, black pepper, avocado, and sour cream. Enjoy!
