Ingredients:

You will need to get 1 head of cauliflower, 2 cloves finely chopped garlic, 2 tablespoons olive oil, 4 cups low-sodum vegetable stock, freshly ground black pepper, 1 medium white onion, 2 sprigs fresh thyme, and salt. Cut the cauliflower into very small florets and the onion in thin slices.

Instructions:

You will need a pot, which you should fill with the olive oil. Set the heat on medium-high and start cooking the onions for 5 minutes. Include the garlic as well and cook together for an extra 1 minute. Stir a few times while cooking. Stir in the cauliflower florets and thyme. Mix often, and leave it on for 3 minutes. Include the vegetable stock, cover the pot and let it cook for 15 more minutes. When the time is up, remove the thyme sprigs.

Take the pot away from the heat and add salt and pepper to your liking. You can now put the cauliflower soup in a blender and blend it very nicely. If you prefer it thinner you can add more broth.
