Vegan Peanut Butter Cookies Are Truly to Die For

These vegan peanut butter cookies are the real deal. They are chewy, soft, and completely delicious. The ingredients are very accessible and most are probably already in your pantry, so get baking!

Instructions

  1. Add 1 cup of sugar together with 1/2 cup of vegan butter in a bowl and beat with an electric hand mixer until smooth.
  2. Once it’s creamy, add in 1 cup of smooth peanut butter and 1 tablespoon of vanilla extract. Beat together with the electric mixer until incorporated.
  3. In a separate bowl, put 1 1/2 cups of all purpose flour, 1 teaspoon of baking soda and 1 of baking powder, and 1/2 teaspoon of salt in a bowl. Combine well.
  4. Add the dry ingredients into the wet and mix well with a wooden spoon or spatula.
  5. At this point, check if the dough is at the right consistency by taking a bit and rolling it into a ball. If it stays, then you don’t have to add anything. It it doesn’t, add in 1 tablespoon of non-dairy milk and mix.
  6. Roll the dough into balls and cover with more sugar.
  7. Bake at 375F degrees for 15 minutes.
  8. When the cookies are done, allow them to cool before taking them off the baking sheet so they can harden completely.
