This Peanut Butter Chicken is Quick and Packed Full of Flavor

Peanut butter is something that is often associated with sweet, but it has plenty of savory applications as well. Often peanut butter is used in Asian cooking, as it rounds out the flavors and brings an extra added sweetness to dishes. This chicken in a peanut butter sauce is such a delicious savory flavor you’ll want to make it over and over again.

Instructions

  1. Start off by cutting 3 chicken breasts into bite-sized pieces.
  2. Chop one large onion into a dice, and finely dice a red chili or whatever kind that is available to you.
  3. Over medium-high heat, saute the chicken so it gets to cook on all sides, about 3 minutes each side.
  4. Then, add in the onions for a couple of minutes along with 1 tablespoon of ground coriander and the diced chili.
  5. Then, add in 2-3 tablespoons of smooth peanut butter, 1 1/4 cup of chicken stock, 2 tablespoons of soy sauce, and the juice of two whole limes.
  6. Whisk everything together so the peanut butter gets incorporated.
  7. Simmer all the ingredients for about 10 minutes until the sauce has thickened up nicely, but make sure to stir so it doesn’t burn.
  8. Serve with steaming white rice, in an Asian inspired salad, or with any type of noodles.
