Easy Broccoli Cheddar Soup

Ingredients

  • 4 cups of chopped broccoli florets
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 4 cups of chicken or vegetable broth
  • 1 cup of cream or whole milk
  • 2 cups of shredded cheddar cheese
  • 3 tablespoons of unsalted butter
  • 3 tablespoons of all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Peel and chop your broccoli, onion, and garlic. 
  2. In a pot, melt butter over medium heat, and sauté onion and garlic until translucent. Sprinkle in flour, stirring for a few minutes to form a roux. 
  3. Gradually add broth, stirring continuously, and add broccoli. Bring to a boil, then simmer until broccoli softens, about 15-20 minutes. 
  4. For a smooth soup, blend with an immersion blender, or leave it chunky. 
  5. On low heat, add cream or milk, then gradually stir in shredded cheddar until melted and creamy, avoiding boiling. Season with salt and pepper. 
  6. Serve hot, garnished with extra cheese or croutons.
