Gazpacho Soup is the Perfect Refreshment on Hot Day

We know what you’re thinking. How can a soup be refreshing on hot days? But hear us out. Gazpacho soup is not like other soups. This Spanish dish will cool you off better than a margarita. And you know what? It’s super easy and fast to make it. Here is how.

Ingredients

  • 2 tomatoes (medium size)
  • 1 cucumber
  • 1 red bell pepper
  • 1 fresh jalapeno pepper (most other chili peppers will work)
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons olive oil
  • 4 fresh basil leaves
  • salt and pepper
  • 1 teaspoon sugar (optional)

Instructions

1. Clean the peppers by removing the top and the seeds.

2. Chop the tomatoes, cucumber, and peppers into large chunks. Put the veggies and basil in a blender and blend until you have a smooth mixture.

3. Add balsamic vinegar and olive oil to the blender. Salt and pepper to preference and continue to blend for 30 seconds.

4. At this point, we recommend you to taste the soup. If you notice it’s too sour for your taste, add sugar. You can also adjust the flavor with more salt and pepper.

5. Blend for 10 more seconds. Refrigerate for one hour.

6. Have the most refreshing lunch you had in a while.
