These espresso pancakes are the perfect way to start the week. Use the recipe to prepare a lot, because everyone will love them.
To make the pancakes, you should get:
200 ml milk
1 teaspoon baking powder
200 g self-raising flour
1 tablespoon instant coffee mixed with 1 tablespoon boiling water
1/2 teaspoon vanilla extract
1 tablespoon golden caster sugar
25 g melted butter
When it comes to the topping, you will need:
130 g Mascarpone
4 tablespoons caster sugar
100 ml espresso coffee
70 g Greek yogurt
4 tablespoons icing sugar
25 ml coffee liqueur
1 tablespoon vodka
40 g chocolate-coated coffee beans
Combine the caster sugar, espresso coffee and coffee liqueur and cook them on the stove until the mixture simmers. Mix all of the pancake ingredients in a bowl. Stir them until you get an even consistency.
Grab a pan and prepare it with a little bit of butter. Use medium-low heat. Start pouring from the pancake mix on the pan and cook each side until it’s golden brown.
The espresso pancakes are almost done. You now need to prepare the topping by combining the yogurt, mascarpone, icing sugar and vodka. Cover the pancakes with the mix and use the coffee syrup on top. Don’t forget to add the coffee beans.
