A Healthy (Delicious) Recipe for Calzones

Calzones are a folded pizza dough that usually contain tomato sauce and mozzarella cheese or ricotta. In the United States, a popular version will be filled with meat and vegetables. But no matter what country you are in, they will always come in the shape of a half moon.

For this recipe, instead of using wheat flour, we will be using the one and only, sweet potato.

Serves 4.

Ingredients:
* 1 cup boiled sweet potato, mashed
* 1 cup cassava flour
* ½ cup arrowroot starch
* 2 eggs
* ½ cup avocado or olive oil
* 1 tsp oregano
* 1 tsp salt
For the fillings:
* 6 tbsp pizza sauce
* 6 fresh basil leaves
* 6 mozzarella medallions

Instructions:
1. Preheat oven to 400 degrees.
2. In a large bowl, mix the sweet potato, flour, starch, eggs, oil and salt until well-combined.
3. Knead the dough with your hands until it is pliable like pizza dough.
4. Lay parchment paper on a flat surface and sprinkle some starch. Flatten half the amount of dough with a rolling pin, roughly a 5” circle.
5. Transfer the dough to a baking sheet; fill one side of dough with mozzarella, basil leaves and pizza sauce.
6. Fold other side of dough to cover the toppings; this should look like a half moon.
7. Fold the bottom into the top to create a lip enclosing the fillings completely.
8. Repeat steps 3–6 for the remaining dough.
9. Bake for 15–20 minutes or until golden brown.
