How to Prepare Low-carb Pizza with Omelet as Crust

Maybe it will seem to you that the low-carb living is a sort of a self–torment, but things don’t have to be that way. This low-carb breakfast pizza we’re about to present you is delightful.

Ingredients

  • 4 large eggs
  • 2 ½ shredded and divided mozzarella
  • ¼ grated Parmesan (plus more for garnish)
  • salt and freshly ground black pepper
  • ¼ teaspoon dried oregano
  • a pinch of red pepper flakes (if you want)
  • 2 tablespoon pizza sauce (or marinara)
  • ¼ c. mini pepperoni and ½ chopped Green Bell Pepper

How to make it?

First, you’ll need to preheat the oven to 400°f and line a baking sheet with parchment paper. In a medium bowl, combine eggs, 2 cups mozzarella, and Parmesan. Stir until combined, then season with salt, pepper, oregano and red pepper flakes. Spread mixture into a ½” thick round on baking sheet.

Now, bake it until lightly golden for about 12 minutes. After that, spread pizza sauce on top of baked crust and top it with remaining mozzarella, pepperoni, and bell pepper. Now, bake again until cheese is melted and crust is crispy. Finally, sprinkle with Parmesan before serving.
