Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 4 boneless, skinless chicken thighs, cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 potatoes, peeled and diced
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion, sliced carrots, and sliced celery. Cook, stirring occasionally, until vegetables are softened, about 5-7 minutes.
  2. Add minced garlic, dried thyme, dried rosemary, and bay leaf to the pot. Cook for an additional 1-2 minutes, until fragrant.
  3. Add the bite-sized pieces of chicken thighs to the pot. Cook, stirring occasionally, until chicken is lightly browned on all sides, about 5 minutes.
  4. Pour in the chicken broth and diced tomatoes with their juices. Stir to combine. Add diced potatoes to the pot. Bring the stew to a simmer, then reduce heat to low.
