Chicken korma is the perfect meal to please a crowd. Its simple and satisfying flavors are super comforting, and the subtle spices and creaminess pair perfectly together. This recipe can easily be multiplied to feed a group. You can add veg if you want something green included, such as frozen peas or wilted spinach.
Ingredients
(Serves 2)
- 2 chicken breasts
- 1 large white onion
- 2 cloves garlic
- 1 inch piece of ginger
- 1 tablespoon dried cumin
- 1 tablespoon dried coriander
- 1 teaspoon chili powder
- 1 tablespoon mango chutney
- 1 cup Greek Yogurt
- 1 cup chicken stock
Instructions
- Slice the onion, garlic, and ginger.
- Chop the chicken breasts into smaller pieces.
- Heat some oil in a large pan.
- Add the chicken and onion to the pan and season to taste.
- Fry for 5-10 minutes, until the chicken is golden and the onions are soft.
- Add the garlic, ginger, cumin, coriander, and chili powder.
- Continue to fry for another 5 minutes.
- Add the mango chutney, yogurt, and chicken stock and increase the heat.
- Leave to simmer for 10-15 minutes, stirring frequently.
- Remove the pan from the heat once the sauce has thickened and reduced.
- Serve immediately with basmati rice and some sprinkled cilantro.
