  • 4 large eggs
  • 1/4 cup of diced bell peppers
  • 1/4 cup of diced onion
  • 1/4 cup of diced tomatoes
  • 2 tablespoons chopped fresh spinach
  • 2 tablespoons shredded cheese (cheddar, mozzarella, or your favorite variety)
  • Salt
  • Black pepper
  • 1 tablespoon olive oil or butter

  1. Heat the olive oil or butter in a non-stick skillet over medium heat. Add the diced bell peppers and onion to the skillet and sauté for 2-3 minutes, or until softened.
