These vegetarian lentil burgers are the perfect weeknight staple food. This is a recipe where you do some chopping and mixing, but it involves little technique and comes out delicious anyway you make it.
Recipe
- Cut half an onion, one carrot, and 1 medium-sized sweet potato into a dice. You can also use any type of potato if you don’t have a sweet potato.
- Put all the vegetables into a pot with some olive oil and cook for 5-7 minutes.
- While that cooks, chop up 2 cloves of garlic.
- Add in chili powder, curry powder, cumin, onion powder, and cook for 1 minute.
- Add in the garlic and cook for 30 seconds before putting in salt, 1/2 a cup of green lentils, and 1 1/2 cups of water or vegetable stock.
- Bring everything to a boil and then down to a simmer for 25 minutes.
- Puree the lentils in a blender or food processor and allow to cool before adding 1/4 cup of breadcrumbs and 1 egg.
- Mix well so you have a dough sturdy enough to hold it’s shaped. If it seems too loose, add in more bread crumbs.
- Divide the mixture into 4 sections and make each section into a patty shape.
- Fry each side on oil for 4-5 minutes, and serve on a bun with your favorite condiments.
