Try Making This Bruschetta Breakfast

Start your day on a flavorful note with this bruschetta breakfast that combines the freshness of tomatoes, the creaminess of avocado, and the richness of poached eggs. This twist on the classic Italian appetizer will definitely elevate your morning routine!

Ingredients

  • 4 slices of bread
  • 2 large tomatoes
  • 1 ripe avocado
  • 4 large eggs
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons extra-virgin olive oil
  • Salt
  • Black pepper

Instructions

  1. In a bowl, combine the diced tomatoes, minced garlic, chopped basil, and a dash of salt. Drizzle with olive oil and gently toss until well combined. Set aside. In a separate bowl, mash the ripe avocado. Season with salt and pepper to taste.
  2. Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and carefully slide them into the simmering water. Poach for about 3 minutes for a slightly runny yolk or longer if you prefer a firmer yolk.
  3. Toast the rustic bread slices until golden brown and crisp. Spread a generous layer of mashed avocado onto each toasted bread slice. Top with the bruschetta mix, spreading it evenly. Carefully place a poached egg on each slice. Garnish with additional chopped basil, a sprinkle of salt and pepper. Serve immediately, and enjoy!
