This Spinach Pesto is Fantastic

Give a big boost to your pasta dishes or sandwiches with this delicious spinach pesto. Bursting with vibrant flavors and packed with nutrients, it’s a versatile and easy-to-make condiment that will become a staple in your kitchen.

Ingredients

  • 2 cups of fresh spinach leaves
  • 1 cup of fresh basil leaves
  • 1/2 cup of grated Parmesan cheese
  • 1/3 cup of pine nuts
  • 2 garlic cloves
  • 1/2 cup extra-virgin olive oil
  • Salt
  • Black pepper
  • 1 tablespoon lemon juice (optional)

Instructions

  1. In a food processor, combine fresh spinach, basil, Parmesan cheese, pine nuts, and garlic cloves. Pulse the ingredients until finely chopped. Scrape down the sides of the processor with a spatula.
  2. With the processor running, gradually pour in the olive oil in a steady stream. Continue blending until the mixture reaches a smooth consistency.
  3. Season with salt and pepper to taste. If desired, add a splash of lemon juice for a zesty kick. Taste and adjust the seasoning as needed. If the pesto is too thick, you can add more olive oil until you reach your preferred consistency.
  4. Transfer the spinach pesto to a jar or an airtight container. Store in the refrigerator for up to a week or freeze for longer storage.
